Are there any Gingerbread lovers out there?!
Here is a recipe for you. You will need a jar of our salted caramel macadamias to decorate. Theses cupcakes would make a perfect gift for someone special, or to take to work to celebrate the Christmas season.
Gingerbread Cupcakes
(Makes 24 cupcakes)
- 200g neutral-flavoured oil
- 200g sour cream
- 150g greek yoghurt
- 3 eggs
- 100g brown sugar
- 75g golden syrup
- 75g molasses
- 400g plain flour
- 2 tsp baking soda
- 1 tsp salt
- 3 tsp ground ginger
- 1 ½ tsp ground cinnamon
- ½ tsp ground cardamom
- 1 tsp ground allspice
Method
Mix all wet ingredients together, add in sifted dry ingredients and mix until smooth. Fill cupcake cases 3/4 full. Bake @ 180 for 15 mins
Salted Caramel Icing
1 tin of Dulce de Leche
400g softened butter
1 tsp salt
Method
Beat butter until light and creamy. Add in the tin of caramel and beat for 5 mins. The mixture will curdle but continue to beat and it will come together again. Add in salt. Pour into a piping bag and decorate cupcakes with our salted caramel macadamias!
