These biscuits are a sweet, salty, and nutty morsel. Add a dusting of icing sugar to finish, and you have the perfect treat to put a smile on a friend or loved ones face. So easy and so good.
Shortbread biscuit recipe:
225g salted butter, chilled and cubed
1 cup icing sugar
2 cups plain flour, sifted
1tsp vanilla paste or essence
In a blender place butter, icing sugar and vanilla. Blend until mixture comes together in a ball. Add in sifted flour and mix just until it all comes together. Tip out onto a floured surface and shape into a ball. Sprinkle some flour on top and gently roll out until 1cm thick. Using a cookie cutter, cut as many circles as you can get and place on a tray with baking paper.
The secret to perfect pale shortbread is to have the oven on a low temperature. Bake at 120 degrees for 30 mins. Place on a wire rack to cool.
Salted maple macadamia butter:
1/2 cup raw macadamia nuts
2 tablespoons water
2 table spoons maple syrup
1/2 teaspoon salt
2 tablespoons butter
Place all ingredients in a blender and blend until smooth. Add more water if needed. It should be the consistency of peanut butter.
Once biscuits are cooled sandwich two biscuits together with a heaped teaspoon on macadamia butter.
Enjoy with a hot cuppa
